Executive Chef Walter Pisano opened award-winning Tulio in 1992 after cooking in such prestigious kitchens as Bravo Pagliacci, Gerard Relais de Lyon and D.C.’s Jean-Louis restaurant at the Watergate Hotel. Former sous chef for Bobby Flay Chef Carolyn Spence draws on her impressive 25-year career to put a distinct polish on casual comfort food and oceanic fare at Shaker + Spear. Prior to joining Outlier, Shawn Applin was executive chef at Seattle's McCaw Hall. He attended the Culinary Institute of America and started his career under James Beard Award-winning Chef Christine Keff. Bookstore Bar & Cafe's new Executive Chef, Aaron Leopold, was Chef de Cuisine under James Beard acclaimed chef Jason Wilson at Seattle favorite Crush.
