Bio

Chef Jay Blackinton left city life behind and created Hogstone's Wood Oven and Aelder, both in the same space on Orcas Island. He was named one of Food & Wine's best new Chefs of 2017 and has been named a semifinalist for the James Beard Foundation's Rising Star Chef Award for the past three years. Chef Jay raises his own pigs, digs his own clams and works on a neighboring farm. As Food & Wine said, "If it doesn't thrive on Orcas, Jay doesn't cook it, a choice that makes for the purest expression of Pacific Northwest cuisine we've ever encountered."
