Chef William Belickis is the chef/owner of Mistral Kitchen. His enduring culinary career began in NYC, but it was in the bounty of the Northwest where he developed his exploratory, fresh and seasonal approach. Chef Belickis landed in Seattle in 1996, becoming Chef de Cuisine at Fuller's, the critically acclaimed dining room at the Sheraton Seattle. He moved to helm culinary operations at Salish Lodge, where he implemented seasonal Chef's Tasting Menus. In 2000, he realized his longtime dream of opening his own restaurant.
